Selon les go\u00fbts<br>Pour les aliments frits, le go\u00fbt n\u00e9cessite un aspect croustillant (la surface est recouverte de mati\u00e8res premi\u00e8res croustillantes telles que le s\u00e9same, les pignons de pin, la chapelure), et l'utilisation d'huile v\u00e9g\u00e9tale raffin\u00e9e peut abaisser la temp\u00e9rature de l'huile.<br>Et les aliments frits doivent \u00eatre croustillants \u00e0 l\u2019ext\u00e9rieur et tendres \u00e0 l\u2019int\u00e9rieur.
